The 2000 Dom Pérignon P2 opens in the glass with aromas of waxy citrus oil, warm bread, dried fruits, fresh peach and iodine. On the palate, it's medium to full-bodied, satiny and textural, with a sweet core of mature fruit, ripe acids and a sapid, elegantly toasty finish. As I wrote earlier this year, the 2000 vintage delivered a precocious Dom Pérignon, and this recently disgorged rendition has really benefited from the additional time sur lattes, acquiring notably more complexity—while retaining more energy—than the original disgorgement.

A beautiful nose of baked peach, lime blossom and graphite draws you into the glass of this stunning 2000, whose flavors of brioche, salted almond and spun honey are wrapped around sleek, mouthwatering acidity and a streak of smoke-tinged mineral. This deftly meshed Champagne is hard to stop sipping.

Decadent and rich DP with so much pie crust, white truffle and dried apple and pineapple character. Limestone too. Full body, layered and flavorful. Lovely texture of fine bubbles. Very rich at the end but then turns fresh and vibrant. Contrast now between ripe fruit and fresh acidity.

Green, leafy, garden notes on the nose initially, which developed into something floral. Quite a rich start. I could certainly drink this now! Open and particularly friendly already but with the tension of an especially classic Dom Pérignon. Just slight chewiness on the end. (JR)

Medium golden yellow with silver reflections and a fine bubbly stable mousse. On the nose there is fine bakery, a touch of orange and stone fruit, fine nutty aromas, very multifaceted, mineral nuances. Complex, juicy texture, rich on the palate and endowed with extractive sweetness, fine acid core, notes of yellow tropical fruit, a delicate touch of caramel, hazelnut oil and dry herbs on the finish, a wine of great complexity and length, perfectly developed.
