We are pleased to introduce the third and final bottling from the triptych in honor of Billy Walker's 50th anniversary in the whisky industry. The GlenAllachie as a young and peated variant that bears the name The Future and completes the series with The Past and The Present.
At The GlenAllachie, they are delighted to present the latest bottling in the celebratory series, which marks the exceptional milestone Billy has managed to achieve: The 50th Anniversary Trilogy. The different bottlings in this trilogy explore the three areas of his expertise; Sherry maturation, barrel management and distillation.
The last chapter of the series.
After taking ownership of The GlenAllachie Distillery in 2017, Billy made drastic changes to the processes to prioritize quality over quantity. These changes include reducing the distillery by more than 80 percent to allow for greater supervision during maturation. The fermentation period was also extended to 160 hours for an ester-rich spirit.
Representing Billy's future endeavors, this historic bottling offers a very special opportunity to gain early access to his peated spirit before it is unveiled in a new range. Additionally, the exceptional whiskey in each bottle marks the first distillate of The GlenAllachie which has been completely overseen by Billy from start to finish.
Made with Speyside peat from St. Fergus, the young and tangy spirit is aged in a blend of former Bourbon and Rye casks, as well as a quantity of virgin oak casks. The result is a spicy single malt, rich in smoked almonds, cinnamon sticks and dark chocolate and with a hint of earthy peat smoke.
Tasting Notes:
Nose: Full of toasted honeycomb, dried fruit and hazelnut. With hints of smoldering oak, dark chocolate and warm cinnamon apples.
Palate: Waves of stewed cinnamon pears, toasted almonds, heather honey and pipe tobacco.
Finish: In the finish we recognize smoked barley, vanilla toffee and orchard fruits.
