Tasting Notes by Jim McEwan, head distiller;
Character: Strong and smooth with a superfine texture, it glides over the palate leaving a Caribbean sunshine warmth which really gets the senses just a little bit excited and then some.
Colour: Chartreuse/Gilded Lily.
Nose: The beautiful aromas of butterscotch, light vanilla and soft marzipan drift over the olfactory senses like marshmallow clouds on a summer’s day. It’s an exciting combo of sweetness and fruit with some floral notes of mimosa, honeysuckle and acacia honey. The oak is there: mellow, mature and providing a superb stage on which the other aromatics can perform. The taste buds are on anticipation alert and they will not be disappointed. The Mardi Gras excitement is about to happen!
Palate: It’s carnival time. Unbelievably, first to perform is the butterscotch and sweet bourbon oak flavours. It’s exciting yet sophisticated as the sweetness of malted barley, American oak and golden rum connect and deliver a stunning taste performance. At this age it’s a spirit in its prime, all those years maturing on Scotland’s Caribbean Island - “Islay” - have honed this spirit to taste perfection.
Finish: The flavours last long into the night and when you awake in the morning there will still be a whisper to remind you of your party in a glass. There is so much happening it’s a taste carnival. Enjoy the experience.
